Carrot Cake

Carrot Cake


This recipe has been tried by many and has had positive feedback. Now I know it sound pretty simple carrot cake but honestly those of you who have not tried it yet, you guys are just missing out. Those of you who have tried this easy desserts recipe will know what I am talking about. For those of you who have tried it out there I would appreciate if you can leave a word or two for those who are sceptical about this carrot cake easy desserts recipe. So they can know that I am not bluffing and it really tastes good.
Ingredients:

--CAKE:--

  • 2 c. sugar
  • 4 eggs
  • 2 tsp. baking powder
  • 1 c. pecans, cut sm.
  • 4 c. grated carrots
  • 1 c. vegetable oil
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon


--ICING:--

  • 8 oz. cream cheese, softened
  • 1/2 stick margarine, softened
  • 1 box powdered sugar (1 lb.)
  • 2 tsp. vanilla extract


CAKE:

  1. Stir all dry ingredients (except pecans and carrots) together and then add eggs and oil. 
  2. Mix until just blended and then add carrots and pecans. 
  3. Bake at 375 to 400 degrees for 35 to 40 minutes or until done.


ICING:

  1. Mix cream cheese and margarine until smooth, add sugar and vanilla and blend. 
  2. Ice when cake is cool.
