Mexican Fruit Cake

You might have tried tons of different types of cakes but honestly in my honest opinion once you have given this mexican fruit cake a try than you`ll know what you are missing. Not only is this an easy desserts recipe but a recipe that fits almost all types of occasions. My guests were really impressed when I delivered this on their plates. Much can be said about this recipe and nothing could be said at the same time. The thing is this recipe speaks for itself and you`ll know what I am talking about once you have given this mexican fruit cake easy desserts recipe a try. Well do try it and leave me your feedback.

Ingredients:
--CAKE:--

  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 eggs
  • 1 c. pecans, chopped
  • 1/3 c. oil
  • 1 (15 oz.) can crushed pineapple

--ICING:--

  • 1 (8 oz.) cream cheese
  • 2 c. confectioners sugar
  • 1 stick oleo
  • 1 tsp. vanilla

Directions:

CAKE:
  1. Mix all ingredients in large mixing bowl. Stir by hand until completely
  2. mixed. Pour into greased and floured 13 x 9 inch baking pan or dish. Bake 40
  3. to 45 minutes in metal pan; 30 to 35 minutes in glass baking dish.
ICING: 
  1. Mix together. Ice when cake is cool. Janice Pearl Curts
