Mexican Fruit Cake

You might have tried tons of different types of cakes but honestly in my honest opinion once you have given this mexican fruit cake a try than you`ll know what you are missing. Not only is this an easy desserts recipe but a recipe that fits almost all types of occasions. My guests were really impressed when I delivered this on their plates. Much can be said about this recipe and nothing could be said at the same time.   • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 eggs
  • 1 c. pecans, chopped
  • 1/3 c. oil
  • 1 (15 oz.) can crushed pineapple


  • 1 (8 oz.) cream cheese
  • 2 c. confectioners sugar
  • 1 stick oleo
  • 1 tsp. vanilla


  1. Mix all ingredients in large mixing bowl. Stir by hand until completely
  2. mixed. Pour into greased and floured 13 x 9 inch baking pan or dish. Bake 40
  3. to 45 minutes in metal pan; 30 to 35 minutes in glass baking dish.
