Helens Whole Fruit Cake

For some reason I am into cakes nowadays, the enjoyment gulping the cake down is just out standing. I just suddenly got a sweet tooth I guess. Anyways this helens whole fruit cake is just heavely in both texture and taste. An easy desserts recipe where it can be served at any party and or occasion. Don`t give a second thought about your guests as I am sure they will blindly give you 100 out 100 for scores on anything that is related to this easy desserts helens whole fruit cake recipe. But before that I would like you to give it a try a couple of times so that it looks presentable. I am not saying you can`t do it but I am just saying it also took me a while to get the hands around it, to at least make it presentable. Let me know your thoughts after you have given it a try.

Ingredients:

  • 1 c. sugar
  • 1 tsp. baking powder (rounded)
  • 1 c. flour
  • 1 lb. whole dates
  • 1/2 lb. candied cherries, green & red
  • 2 c. English walnut meats
  • 1 c. Brazil nuts (whole)
  • 4 egg yolks, beaten
  • 1 c. sugar
  • 1 tbsp. cherry brandy flavoring
  • 1/2 c. orange juice or apricot juice
  • 1 tsp. vanilla
  • 4 egg whites, stiffly beaten

Directions:

  1. Sift together sugar, baking powder and flour. Add whole dates, cherries,
  2. walnut meats and Brazil nuts. Add 4 egg yolks, 1 cup sugar, cherry brandy flavoring,
  3. orange juice or apricot juice, and vanilla. Mix all together real good. Fold
  4. in 4 stiffly beaten egg whites. Pour into tube pan, greased and floured. Bake
  5. in 250 degree oven 1 1/2 hours. Cool. Soak cheesecloth in brandy. Wrap cake
  6. in cheesecloth, then in foil. Glaze and decorate with candied cherries.
